Description: An ideal base for swiss rolls including the egg functionality.
Applications: Suitable for making swiss rolls or similarly aerated products.
Advantages: Simple to use, versatile across different applications, better at retaining moisture, including egg functionality, raising agents emulsifiers. Typically 5%-15% cheaper on batter costs compared to similar concentrates.
Dosage: Typically dosed in at 12% of total batter weight dependent on application requirements. This includes the egg functionality.
